Trails connect the villages through grove and vineyards, often marked trails
identified in the local language that connect through the hills.  You can hike through the narrow cobbled streets of one village and then into the hills on marked  trails through the groves and vineyards for the hike to the next village. A good map and compass/gps will keep you on track.
Each village has a market day where the fruits and vegetables will be fresh or you can find the produce vendor to stock up on the low-fat crushed olive tapinades spiced with basil, the fresh  fruits, goat cheese, and French bread. Your trail might lead to a local vineyard for a bottle of wine to complete the  picnic lunch on the way to the next village.
In the Luberon Mountains and Vaucluse Plateau, and in the
Alpilles, the villages where you will find lodging are usually no more than six to ten miles apart
Hiking may not be allowed in July and August, however, when forest fire danger is high

Hiking and Biking  In Provence

Provence includes the agricultural lands east of Avignon where lavender is an important crop along with sunflowers and cherries.  
This is the area of the Luberon Mountains and Vaucluse Plateau where you pass the farms that grow lavender ripening in late June for a mid- July harvest.
Country roads south of lavender country in the Alpilles between St. Remy and Cavaillon make great biking and hiking
